I Saved Chicago
Rather than watch them slowly wrinkle up and sadly wither away on our counter top as the peaches, cucumbers and zucchini are rapidly disappearing, Jonathan and I decided to ignore our perplexity and inexperience with them and actually make something with the eggplants. Shocker. After all, it would be rude to let them go bad during Farmer’s Market Week. So, we lightly fried them, then baked...
